I first visited the Grace years ago to savor a sunset cocktail at its Champagne bar. It was the brightest sunset I’d ever seen, and the image of the vast sea drenched in orange light is something I will always cherish. When I returned to Santorini this summer, on my first trip to Europe since before COVID started, I knew I had to stay there.

We chose a deluxe room with a plunge pool, which was spacious enough for two. There are also available suites and even a two-bedroom villa for larger groups. The heated plunge pool directly overlooked the caldera, which made it difficult to leave our patio. However, with many activities available on the island—rental boats, hiking, winery hopping, and exploring Oia and Fira—we did find some time to venture out. For remote workers, this was a dream-like weekday situation.

We enjoyed a late-night dinner at Santoro, seated in one of the cave-like, outdoor tables, indulging in lobster in herb ravioli topped with caramelized hazelnuts, and lamb in a coffee-infused sauce. We eagerly anticipated breakfast each morning, served beside the infinity pool, with a multi-course menu that varied daily.

Although Santorini is one of the world’s top tourist destinations, we experienced a quieter side of the island as it first reopened to Americans. The hotel was occupied, yet never felt crowded. The spacious rooms and private outdoor areas make it the ideal choice to find seclusion, even amidst the lively spirit of Santorini.
