His organization aims to transform ordinary dining establishments into certified Green Restaurants. This initiative started focusing on the Flatiron/NoMad area, a prime location for showcasing sustainable practices due to its vibrant culinary scene.
Certification Process for Restaurants
Certification as a Green Dining Destination involves rigorous criteria but is achievable, according to Oshman. The Green Restaurant Association offers support to restaurants willing to implement necessary environmental changes and verifies adherence to their eight standards of certification.
So far, several establishments including Scarpetta, Barcade, and Honeybrains have successfully enrolled in this program, with the goal of certifying 20 restaurants in the area.
Meadow highlighted that incorporating vegan and vegetarian options, local food sourcing, and sustainable packaging significantly contributes to reducing waste. Oshman added that while progress has been made, a stronger urgency is needed to address sustainability challenges across the industry. Both emphasize that small, consistent efforts can lead to substantial impacts in environmental sustainability.
