When you think of a Spritz, Aperol might be the first aperitivo that comes to mind. However, there’s been another Italian bitter on the tips of our tongues as of late. Select Aperitivo is a little darker, a little more bitter, and features a smoother, more refined flavor than Aperol. Not to mention, it’s the drink of choice for Venetians when enjoying the canal-lined city.
Select was created by the Pilla brothers in 1919 and trademarked in 1920, celebrating its 100th anniversary this year. It gained strong popularity straight away, especially as Venice served as a vacation spot for Italy’s elite, reachable only by private boat. They would sip Select and then spread the word about this aperitivo back in their hometowns. Initially, it was quite expensive and was enjoyed on its own with a bit of ice or a splash of soda water.
The addition of soda gave rise to the Spritz, although it wasn’t invented by the Italians. In the late 1800s, Venice was under Austrian dominion, and off-duty soldiers would visit local bars, known as bacari, sampling local wines. However, the strong white wines were off-putting, so they would request a “spritzen” (a splash of water) to soften it. It wasn’t until the 1970s that the modern Select Spritz, with the addition of prosecco, was borne, offering a lively effervescence and increased alcohol content. Today, it typically includes three ounces of prosecco, two ounces of Select, and a splash of soda.

If you’ve enjoyed a Spritz before, it was likely garnished with an orange peel or citrus. However, the Select Spritz is traditionally adorned with a green olive, symbolizing the Venetian way of life. In the mid- to late-afternoon, Venetians frequent a bacaro, order a Spritz along with two to three cicchetti (small, tapas-like bites).
