Culinary Journey Through the Dominican Republic with Chef Tita
Date: 1 September 2021
Inés Páez, known as Chef Tita, has been dedicated to the culinary arts since she was 17 years old. She is recognized as a leading figure in the new Dominican cuisine and a significant contributor to the Gastronomic Diplomacy program in the Dominican Republic.
Aromas That Define Dominican Culture
The aroma of coffee in the morning is a fundamental part of Dominican culture and identity. Additionally, the fragrant blends of ginger, canelilla, and lemongrass infusions have shaped my palate and memories.
Local Markets to Explore
The Dominican Republic thrives on agriculture, making its markets vibrant and full of life. Visiting these markets allows me to immerse myself in the joy of our people and discover the diverse products unique to our land. Here are my favorite markets:
- Livestock Fair Market: Located on George Washington Avenue along the Malecón, this market is a gem for local produce.
- Mercado Modelo: Nestled on Avenida Mella, just north of the colonial zone, this historical market boasts over 70 years of tradition and showcases a wide variety of handcrafted products, including clay pottery, paintings, crafts, and sweets.
- Merca Santo Domingo: Opened in 2012 on the Duarte Highway, this is a collection and distribution center for fruits grown in our fertile lands, providing fresh produce to markets and supermarkets nationwide.
- Central Market in Ágora Mall: This market occurs once a month, where I actively support and promote low-income producers, giving them visibility.
Favorite Restaurants
When it comes to dining out, I have a few top picks that showcase the rich culinary heritage of the Dominican Republic:
- Ajualá: Known for its signature cuisine that highlights local ingredients.
- El Gallego: This restaurant combines Spanish culinary traditions with Dominican influences.
- Dominican Gastronomic House: Located in the colonial zone, it offers traditional Creole cuisine.
Must-Try Traditional Dish
No visit to the Dominican Republic is complete without savoring our nation’s flagship dish, The Dominican Flag. This dish, comprised of white rice, concon (crispy rice from the pot), stewed black beans, chicken, caramelized ripe banana, green plantains, and avocado tostones, has enchanted my taste buds since childhood, particularly because of my mother’s special preparation.
Unmissable Culinary Highlights
For travelers eager to experience authentic Dominican cuisine, I recommend trying:
- Sancocho of Seven Meats: A hearty stew that is a local favorite.
- Chenchén: Particularly the variant from the south, cooked with stewed goat.
- Sweet Beans: A delightful addition to the traditional meal.
