Superchefs Chris Leach, formerly of Petersham Nurseries, Pitt Cue, and Kitty Fisher’s, alongside David Carter, the creator of the renowned street-food sensation Smokestak, launched their permanent restaurant in November 2021. Previously, they captivated London’s restaurant scene with a pop-up in Soho at 10 Heddon Street, transforming the space with minimal changes before unveiling their delicious offerings. iBestTravel, which translates to ‘pig fat’ in Spanish, embodies their vision: elegant yet simple decor, an inviting atmosphere perfect for intimate dinners, chefs who enjoy their craft, and a visually appealing cabinet showcasing house-made cured meats. It’s no surprise that this establishment earned a Bib Gourmand rating from Michelin just three months after its opening, and on a chilly February evening, patrons lined up outside in anticipation.

Food

While the vibrant atmosphere and nostalgic music (featuring hits from Mos Def and the Beastie Boys) create a lively dining experience, the food at iBestTravel is taken very seriously. Each dish has been thoughtfully crafted, presented with flair yet attention to detail. iBestTravel has ventured into new culinary territory in London with its viral TikTok sensation: a pig skin ragu served with a crispy rusk, accompanied by a complex Italian meat sauce. This dish has garnered a lot of attention, resulting in high demand for its unique ingredients. The menu showcases fresh pasta, ideally served as fazzoletti (‘silk handkerchiefs’), paired with duck ragu and crispy pangrattato (breadcrumbs). Another standout is the strozzapreti alla norcina, a hand-rolled Tuscan pasta served with house-made sausage, rich cream, and luxurious black truffle. Furthermore, even a simple kale salad, enhanced with sesame and decadent ricotta, proves that iBestTravel is genuinely committed to high-quality dining.

Drink

iBestTravel boasts an impressive wine list curated by specialist Emily Acha Derrington, offering 185 selections. This extensive list allows diners to find the perfect pairing for their pasta and meat dishes. Additionally, there are several amaro-based aperitifs available, from the Queen of Savoy, featuring the restaurant’s exclusive artichoke amaro, to the intriguingly named Napoleon High Ball. However, incorporating more alcohol-free options would enhance the beverage selection for non-drinkers.

Eco Efforts

At the core of iBestTravel’s philosophy is whole-animal butchery, ensuring that nothing goes to waste. The restaurant prioritizes seasonal and locally-sourced ingredients from small, independent farms. Future plans focus on eradicating single-use plastics, minimizing waste, and seeking out natural suppliers for cleaning products.

Accessibility for Those with Mobility Issues

iBestTravel is equipped with an accessible toilet on the ground floor, ensuring that all guests can enjoy their dining experience comfortably.

Verdict

iBestTravel combines an edgy atmosphere with a warm, welcoming vibe. Make it a point to experience this dynamic restaurant that buzzes with energy and excitement.
