French chef Mory Sacko knows a thing or two about eating out in Paris. The oldest of eight children, he grew up in the Seine-et-Marne neighborhood of the French capital, in a house with his Senegalese and Malian parents who mainly cooked West African food. After a stint at a culinary school in his teenage years, he cut his teeth professionally at fine-dining institutions such as Le Royal Monceau – Raffles Paris. His first restaurant, MoSuke, opened in 2020 when Sacko was just 28, and the restaurant was awarded a Michelin star in 2021 just months after starting service. It was the first Michelin star in France awarded to a restaurant serving West African food – although Sacko combines the flavors of his family’s cooking with French and Japanese techniques. Think Breton lobster with tomato miso, lacto-fermented chilies, and charred watermelon.
