Meet Chef Mashama Bailey
In our latest podcast episode, host Kellee Edwards interviews James Beard Award-winning chef Mashama Bailey along with her business partner, John O. Morisano. They discuss their restaurant, The Grey, which is located in a formerly segregated Greyhound bus terminal. The conversation emphasizes the importance of reclaiming historical spaces.
A Commitment to Preservation
Morisano describes the significance of the Greyhound bus terminal, stating, “It was kind of an amazing example of an art deco space in the south and in Savannah. It needed preservation, and so I decided to take on the project of preserving this abandoned 1938 Greyhound bus terminal.” He reflects on how this desire to operate a restaurant came to fruition once he took on the project.
More than Just a Restaurant
For Mashama, The Grey transcends simply serving delicious food. It represents a broader mission of highlighting the richness and diversity of Savannah’s culture.
Embracing Cultural History
Mashama speaks to the evolving nature of Savannah, stating, “With the expansion of the port and just the city in general, I think it’s growing. I want to speak to the food here as worldly and reflective of local history.” She emphasizes the importance of supporting local farms and businesses to contribute to Savannah’s thriving community.
